Tasks templates as lesson plans...but not a recurring task: client management

I run online courses and in a blended mode I need to track which lessons have been completed for which client (no my LMS doesn't have that feature). I'm in the process of setting up a project with each client as a section and the courses they are taking configured as as tasks, subtasks, and checklists.

Each course has multiple modules with multiple units (some of them quite a few). For each unit there are sections that I need to construct a lesson plan for. I know how to configure checklist templates and recurring tasks. The issue is I currently have >100 units across all courses so searching for 20+ checklists for a single course is not very efficient and there's the risk of missing selecting lessons. I need to be able to select a course (task) to drop into a client with the modules, units and lesson plans (checklists) ready to go. I can't schedule it as a recurring task, it has to be on demand.

A while ago I suggested global templates for checklists, and this would be and additional suggestion; to extend templates to tasks and subtasks and be able to add them to any project rather than isolated to the one they have been created in.

The only other way I can think of doing it is with a Notes template or mindmap, but I'd need to be able to copy to each client section within the project, for each new enrolment. Anyone had any experience with this that can make a suggestion?
